Rainbow trout is not red; it is a white flesh fish. That's how my local store labeled this fish. Larger and slightly older rainbow trout will change from the white pale color of younger, often farm raised trout to the more orange color of fresh salmon. I am one hundred percent certain of my statement as I have fished for and caught rainbow trout for many years.

This includes the two salmon colored trout that I will cook today which I caught yesterday. I prefer rainbow trout over salmon and always come back to this recipe when making my rainbow trout!! Best recipe ever!!!

Cheryl Plowden. I used a sheet pan lined with non-stick foil. After basting with olive oil, I placed lemon slices in and on the trout. After baking 10 minutes, I turned the trout over and baked for 10 minutes. I did not add any water. The result is delicious moist trout. Thank you. I posted this recipe and was sorry to read someone shattered their pyrex dish adding water!

I know what this is like as my hubby did the same once with a totally different dish. I had no problem because I added Hot water, which maybe I should have mentioned, but for safety reasons if you prefer a metal pan that's a good idea.

Glad people are enjoying this. Simple and delicious. I used a mixture of fresh herbs from my garden which added flavor and lightness. Onions, lemon, salt and pepper and you're done! To make it a bit more clear I just added this to the notes section of the recipe. Put lemon on at the end. A dry white wine,a small amount of good olive oil A pat of butter some herbes de Provence and some coarse salt and ofcourse a squirt of lemon at the end.
